Some say brown chapati is an acquired taste, I say you just haven't found the right recipe. Whether you made the conscious decision to choose brown over white like most of my fellow Seventh-day Adventists, or are changing your eating habits by opting for a healthier options, you will want to try my whole wheat chapati recipe. You are probably fond of the white chapati but I am about to change that with this post.
Chapati making is a skill that needs lots of practice just like any other cooking technique but below is the recipe; with the tips and tricks to make you an expert immediately.
Ingredients;
3 Cups Nutrameal Atta mark sieved flour
1 Tablespoon Lemon rind
1 Teaspoon Cinnamon
1/2 Teaspoon salt
1 1/2 Cups warm water
Oil for cooking
Method;
Pour the 1 1/2 cups of warm water into a bowl and add the salt(warm water ensures a soft texture to the chapatis).
Add the lemon rind and cinnamon and mix well.
Now add the flour to the mix bit by bit, and start kneading until all the mixture is not sticky.
Add 2 tablespoons of oil and keep kneading. Continue kneading on your work surface for another 3 mins. (For soft chapatis, you should knead thoroughly).
Stretch the kneaded flour on your smooth work surface using a rolling pin. After completely stretching it out, add 2 tablespoons of oil and rub it in and then roll it horizontally .
Use a sharp knife to cut the rolled dough horizontal into several different pieces. For each piece roll the piece clockwise and then firmly press the rolled piece together to form a ball like the one shown below. (Sprinkle a little flour so they don't stick to the surface).
Roll out the balls in a circular shape with a rolling pin, one at a time.
8. In a medium heat, place your skillet, let it warm up for 10 minutes(it's very important for the pan to be well heated before you begin). Then put your chapati on top. Fry both sides until brown. Once cooked remove and place it in a container and cover.(Drape a cotton cloth over the container so the chapatis maintain their moisture and warmth for longer).
9. Serve with your favorite stew or even tea. Enjoy.
